Ingredients:

  1. In a large food processor, shred the nuts and coconut on high until it has the consistency of sand.
  2. Add the chia seeds and cacao powder and blend until well mixed, but before it starts to stick together much.
  3. Add dates 2-3 at a time until the mixture holds its shape when pressed into a ball with your fingers. 1/2c is an approximation for about 10-15 dates. Depending on humidity you may need more or less.
  4. You may need to periodically shake, or stop and scrape the sides of, the food processor in order to get an even blend.
  5. With clean hands, roll small amounts of this mixture into balls, and pack tightly.
  6. Keeps well in the cupboard, as all ingredients are shelf-stable. Tasty enough that it won't be around long enough to get old.
