Ingredients:

Directions:

  1. This can either be done in a food processor or by hand.
  2. Preheat oven to 375 degrees Fahrenheit.
  3. In a bowl mix 1 cup buttermilk into the bran. Set aside.
  4. Spray muffin tins liberally with non-stick vegetable spray. Set aside.
  5. Mix wet ingredients in a bowl (egg, oil, molasses). Stir until combined.
  6. Add dry ingredients: cinnamon, baking soda, baking powder, salt, brown sugar, flour and the bran mixture that was set aside. Mix well. Mixture will be dry.
  7. Add remaining cup of buttermilk. Stir.
  8. Fill muffin tins.
  9. Bake 15 to 20 minutes in a 375 degree oven.
