Butter-pecan Cake

Ingredients:

  • 2 1/4 cup. flour
  • 2/3 cup white sugar
  • 1 cup. brown sugar
  • 3 tsps. baking powder
  • 1 tsp. salt
  • 3/4 cup. shortening
  • 1 cup. sweet milk
  • 3 eggs
  • 1 tsp. vanilla
  • 3/4 cup. pecans

Directions:

  1. Sift flour, white sugar, baking powder, and salt into bowl.
  2. By hand blend brown sugar in flour mixture.
  3. Add shortening and 3/4 cup of milk.
  4. Beat 2 minutes.
  5. Add eggs and remaining milk and vanilla.
  6. Beat 2 minutes.
  7. Stin in pecans.
  8. Bake in 2 9 inch pans greased and line bottoms with wax paper.
  9. Bake 375 for 20 to 25 minutes or until done when tested.
  10. Ice with carmel icing.
