Ingredients:

  1. Over medium heat. Stir in the onion, garlic, and bacon; cook until onions are soft and bacon is browned a bit (you can drain some of the bacon fat if you wish).
  2. Add buckwheat; cook and stir until the buckwheat turns orangeish brown, about 5 minutes.
  3. Add the stock and bring to a boil over medium-high heat.
  4. Reduce the heat to low and simmer gently until the liquid is absorbed and the buckwheat is tender,13 to 15 minutes.
  5. Toss with the parsley, and season to taste with salt and pepper.
