Brown Sugar Baked Acorn Squash

Ingredients:

  • 2 tbps olive oil
  • 2 tbps brown sugar
  • 1 tbps butter

Directions:

  1. Preheat Oven to 450 degrees
  2. Cut acorn squash in half
  3. Scoop out seeds and discard
  4. Cut squash into 8 wedges
  5. Place on a shallow baking sheet or cookie sheet lined with foil
  6. Drizzle with olive oil
  7. Sprinkle with salt and pepper
  8. Toss to coat
  9. Place each wedge skin down
  10. Bake for 15 minutes
  11. Remove from oven
  12. Place small pad of butter on each wedge and sprinkle with brown sugar
  13. Continue to bake for 15 minutes
  14. Serve warm
