Baked Acorn Squash With Cinnamon

Ingredients:

Directions:

  1. Cut into halves or quarters & clean out the seeds.
  2. Place pieces upside down in baking dish.
  3. Pour 1/4 inch water into baking dish.
  4. Microwave for 8 minutes, turning once.
  5. Remove carefully (hot!).
  6. Transfer *right-side up* to foil-covered oven platter.
  7. Brush each semi-squishy piece with oil.
  8. Then sprinkle with cinnamon & nutmeg, to taste.
  9. Optional: Sprinkle raisins over the spices, remembering that raisins are high in sugar (in case diabetes is a concern).
  10. Bake at 350 for 25 minutes, or until the acorn squash looks golden and crispy.
