Broiled Orange Roughy

Ingredients:

  • 2 orange roughy fillets
  • 2 tbsp olive oil
  • 1/4 tsp oregano
  • 1/4 tsp cayenne
  • 1/4 tsp thyme

Directions:

  1. Stir oil and a bit of Tabasco together set aside.
  2. Mix together bread crumbs with herbs set aside.
  3. Brush olive oil mixture on filets.
  4. Roll in breadcrumbs mixture.
  5. Broil 4-5 inches from the heat for 10 minutes.
  6. Flip it on the other side and broil another 4-10 minutes until fish flakes easily with a fork.
  7. The broiling time depends on the thickness of the filet.
