Broiled Eggplant

Ingredients:

  • 1 medium to large eggplant
  • 3 heaping tbsp sriracha hot chili sauce-- found in local korean market.
  • 2 tbsp sesame oil
  • 2 to 3 tbsp fresh lime juice

Directions:

  1. Cut eggplant in to chunks
  2. Mix the rest of ingredients and pour over eggplant making sure all eggplant gets the love
  3. Place on a baking sheet one layer
  4. Broil for 10 to 15 minutes depending on size and amount of eggplant
