Broccoli-Cheddar Cheese Casserole

Ingredients:

  • 3 tbsp oil
  • 4 tbsp butter or 4 tbsp margarine
  • 4 tbsp flour
  • 1/2 cup milk
  • 1/2 tsp salt , or to taste
  • 1/4 tsp pepper
  • 1 dash nutmeg
  • 1 pinch turmeric
  • 1/2 tsp paprika
  • 1/2 cup white flour
  • 1/4 cup wheat germ

Directions:

  1. To make the Cheese Sauce-.
  2. Heat oil in a skillet and sauté the onion until golden brown; set aside.
  3. Preheat oven to 350 F degrees.
  4. In a saucepan, melt butter slowly over low heat.
  5. Stir in flour, blending until smooth.
  6. Slowly stir in milk, then add the sautéed onion to the flour mixture.
  7. Cook the mixture, stirring with a wooden spoon, until thickened and smooth.
  8. Place in the oven for 20 minutes.
  9. Remove, add seasonings and stir in the cheese until melted.
  10. Set aside.
  11. To finish the Casserole-.
  12. In a separate pot, cook the broccoli and drain.
  13. In a large bowl, combine the drained broccoli, flour and eggs.
  14. Add the cheese sauce and pour into a 1 1/2-quart greased casserole.
  15. Sprinkle top with wheat germ.
  16. Bake for 35 minutes or until cheese is bubbly.
