Ingredients:

  • 6 cups water
  • 1/3 cup kosher salt
  • 1/3 cup brown sugar
  • 3 tbsp chili powder
  • 1 tbsp olive oil
  • salsa , of your choice

Directions:

  1. Bring 2 c water to a boil.
  2. Add sugar and salt and stir to dissolve.
  3. Add chili powder and remaining water.
  4. Remove from heat and cool.
  5. In a large bowl add pork chops and brine.
  6. Refrigerate 6 hours or overnight.
  7. Remove chops from brine pat dry.
  8. Brush with olive oil, season with pepper,.
  9. Grill about 12-14 minutes per side until chops are done, or a thrmometer reads 160 degrees serve with salsa.
