Boiled Thickened Potatoes

Ingredients:

  • 6 medium potatoes
  • 2 tsp cornstarch
  • 1/2 stick butter

Directions:

  1. Wash and peel potatoes then slice to desired thickness.
  2. Boil potatoes in water until fork tender then drain off half the liquid, saving liquid.
  3. Add butter, salt and pepper.
  4. Mix cornstarch with 1/3 cup reserved water.
  5. Turn heat to high and slowly add cornstarch.
  6. Simmer for 10 minutes then serve.
