Bob Evan's Spicy Sausage Enchiladas

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Wrap tortillas in foil and place in oven to warm.
  3. In skillet, crumble and cook sausage and onions over medium heat until browned.
  4. Remove from heat and add beans and tomatoes.
  5. Pour 1/4 of enchilada sauce on bottom of 9 x 13 baking dish.
  6. Remove tortillas from oven.
  7. Divide sausage mixture between tortillas, roll up and place in baking dish.
  8. Cover with remaining enchilada sauce.
  9. Top with grated cheese.
  10. Bake 20-25 minutes or until hot.
