Blueberry Toasting Bread

Ingredients:

  • 1/4 cup sugar
  • 1/2 packet rapid rise yeast
  • 1 1/2 cup warm water
  • 1/2 tsp salt

Directions:

  1. Dissolve yeast, sugar and salt in warm water in large bowl. Let sit for about 5 minutes until frothy.
  2. Add blueberries ( if using frozen berries, allow them to come to room temperature first)
  3. Slowly and Gently add flour
  4. Stir dough, slowly adding flour, until dough is stiff and pulls away from sides of bowl.
  5. Turn onto lightly floured surface and knead. Some berries will pop, but knead GENTLY and don't over-knead.
  6. Place dough in large, covered, greased bowl and allow to rise in warm place until doubled (about 45 minutes) See Photo
  7. Turn onto floured surface and gently knead again.
  8. Shape dough into a loaf and place in large greased loaf pan.
  9. Cover and allow to rise in warm place for about an hour.
  10. Bake at 350 F for 25-30 minutes, until golden brown.
  11. Enjoy! Makes one large loaf.
