  1. Combine sugar, flour, and salt in a small saucepan. Gradually add hot water and lemon juice, stirring until combined. Cook over medium heat, stirring constantly, until smooth and thickened. Stir in blueberries, and cook 2 to 3 additional minutes. Remove from heat; add butter, and stir until butter melts. Serve warm over soufflé.
