Blueberry Oatmeal Muffins

Ingredients:

  • 1 1/4 cups flour
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 1 cup milk
  • 1 egg
  • 1/4 cup oil
  • 2 tbsp sugar
  • 2 tsp cinnamon

Directions:

  1. Preheat oven to 425 degrees.
  2. Combine oats, flour, 1/3 C sugar, baking powder and salt in a bowl.
  3. In another bowl, combine milk, egg and oil.
  4. Add liquid ingredients to the dry ingredients, mix until moist only.
  5. DO NOT BEAT!
  6. Fold in blueberries.
  7. Fill greased muffin cups 2/3 full.
  8. Mix topping ingredients.
  9. Sprinkle over muffin batter.
  10. Bake 20- 25 minutes.
  11. Serve warm.
