Ingredients:

  • 2 cup flour
  • 1 cup sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup oil
  • 1 cup milk
  • 1 tsp vanilla

Directions:

  1. Heat oven to 400 degrees. Grease muffin tin. In mixing bowl, stir the dry ingredients together. Add beaten eggs, oil, milk, and vanilla. Mix with spoon until flour is just moistened. Batter will be lumpy. Fold in blueberries with a few strokes. Fill greased muffin cups 2/3 of the way. Sprinkle tops with sugar and cinnamon if desired. Bake in hot oven (400 degrees) for about 20 minutes. Makes 24 muffins.
