Ingredients:

  • 1 egg
  • 1 cup. flour (white is best, but for health minded use stone ground whole wheat)
  • 3/4 cup. milk ( skim
  • 1 tsp sugar
  • 2 tsp oil
  • 1/2 tsp salt
  • 2 tsp lemon zest

Directions:

  1. Beat egg until frothy
  2. Fold in remaining ingredients except blueberries, stirring just until smooth.
  3. Gently fold in blueberries.
  4. Note: You can use frozen berries of any kind or mix-just put them in the fridge covered with Saran wrap the night before. Makes about 3-4 pancakes for each person.
