Ingredients:

Directions:

  1. In a mixing bowl, combine buttermilk, sour cream, mayonnaise, garlic, Tabasco, Worcestershire, salt, pepper and lemon juice and mix until very smooth.
  2. Add 1/2 pound of the cheese and gently mix by hand until just combined. Refrigerate the sauce.
  3. Fry bacon.
  4. Drain off fat.
  5. Chop bacon and set aside.
  6. Wash and slice the potatoes into chips-a little on the thick side, you want them sturdy.
  7. Soak the chips in cold water for at least 5 minutes to remove excess starch.
  8. Drain the chips, give them a quick rinse and pat dry.
  9. Heat the oil to 350 degrees.
  10. Fry the chips 4-6 minutes, or until golden and crispy.
  11. You may need to do this in several batches to prevent overcrowding. Remove and drain on paper towels.
  12. Preheat the broiler.
  13. Place a 1/4-inch layer of sauce over the entire surface of a large, oven safe serving plate.
  14. Evenly sprinkle the reserved cheese crumbles and bacon over the sauce.
  15. Place the plate under the broiler until the cheese melts and slightly browns. Remove plate and pile the chips directly onto the warm sauce and serve immediately.
