Ingredients:

Directions:

  1. Boil black eye peas for 20 min
  2. Brown saussage
  3. Drain all but 2 Tbsp of grease
  4. Remove sausage from pan
  5. Put onion and peppers garlic salt and pepper in pan cook until soft
  6. Add sausage and peas to pan heat together until most of the liquid is reduced
  7. Remove from heat pour into casserole dish
  8. Wisk 5 eggs and heavy cream together
  9. Mix cheeses together
  10. Add 1/2 of the cheese to egg mixture
  11. Pour egg and cheese over casserole until all ingredients are covered
  12. Place casserole into 350 pre heated oven for 25 min
  13. At 25 min remove casserole cover with the rest of the cheese mixture
  14. Return to oven cook for 10 more minutes until cheese is melted and turnning brown
  15. Do knife test to be sure it is done (should be clean after inserting into casserole)
