Ingredients:

  • 1 3/4 cups flour
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp allspice
  • 2/3 cup milk
  • 1/2 cup pumpkin
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/2 cup raisins (optional)
  • 1 tbsp brown sugar

Directions:

  1. Mix dry ingredients except brown sugar.
  2. Mix wet ingredients.
  3. Add wet to dry, and stir to just mix. Add raisins if using.
  4. Divide between 12 paper lined muffin cups.
  5. Sprinkle with a bit of brown sugar.
  6. Bake at 400F for 20 minutes.
