Bettes Diner Buttermilk Pancakes

Ingredients:

  • 1 cup flour
  • 1 tbsp sugar
  • 1/2 tsp baking soda
  • dash of salt
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup milk
  • 1/8 cup melted butter
  • ( you can double this recipe if you'd like to make a bigger batch ).

Directions:

  1. Combine flour, sugar, baking powder, baking soda and a dash of salt in a bowl.
  2. In a separate bowl, lightly beat the egg, buttermilk, milk and butter.
  3. Add the liquid ingredients to the dry ingredients. Stir just to blend.
  4. The batter should be slightly lumpy and quite thick.
  5. Let the batter rest for 5-10 minutes.
  6. Pour 1/4 c measures of the batter onto a grill.
  7. Cook 2-3 minutes and then flip and cook for 2 minutes more ( you can adjust the cooking time as required for your grill ).
  8. Enjoy! These are a favorite of ours to make on the weekends.
