Ingredients:

  • 1 cup water
  • 3/4 cup oats
  • 3 tbsp butter
  • 1 1/4 cups flour
  • 1 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 -1 1/2 cup buttermilk
  • fresh fruit (optional)

Directions:

  1. In a saucepan, bring water to boil. Add oats and cook, while stirring, for 3 minutes. Remove from the heat. Add butter and mix until melted. Let cool.
  2. In a large bowl, sift flour, sugar, baking powder, baking soda and salt. In another bowl, mix eggs and buttermilk. Add to the oat mixture that is cold.
  3. Add egg mixture to dry ingredients and stir until it’s homogeneous, without stirring too much. (If the dough is too thick, you can add a little bit more buttermilk)
  4. Preheat your waffle pan and brush the pan with melted butter. While following the instructions of the manufacturer, pour a little bit of dough on the pan and cook for about 4 minutes or until golden. Sprinkle with icing sugar. Serve with fresh fruits if wanted.
