Berry Cinnamon Muffins

Ingredients:

  • 2 cups flour
  • 1/2 cup plus 3 tbsp white sugar
  • 1/2 tsp salt
  • 1/4 cup plus 1 tbsp melted butter
  • 1 egg
  • 1 cup 1% low-fat milk
  • 3 tbsp 1% low-fat milk
  • 1 1/2 tsp vanilla
  • 3/4 cup berries
  • 1/4 cup brown sugar
  • 1 tbsp flour
  • 1 tsp cinnamon
  • 1 tbsp butter

Directions:

  1. Mix together the flour, all the white sugar, baking powder and salt.
  2. Set aside.
  3. Melt the butter (1/4 cup plus 1 T.) and cool a little. Add the vanilla to that and mix.
  4. Mix the egg and egg white together to combine. Combine with all the milk.
  5. Add the milk mix to the butter and wisk to combine.
  6. For the Filling, mix the brown sugar, flour, cinnamon and cut in the butter, then stir in the nuts.
  7. Stir the butter/milk mix into the flour mix just until combined.
  8. Place a large tablespoon of the batter into each of the greased 12 muffin cups. Top with 2 teaspoons of the filling mix and 2 to 3 berries.
  9. Add on the rest of the batter and dust with a teaspoon or so of the remaining filling mix.
  10. Bake for 20 minutes at 350 degrees.
  11. Let them cool in the pan for 5 minutes and turn out to cool on a rack.
