Basil Salad With Mozzarella On Ciabatta Bread

Directions:

  1. Squeeze cherry tomatoes with your hands in a mixing bowl and tear them apart into smaller pieces. Don't wear your best shirt when you do this. You can cut the tomatoes with a knife but crushing them this way makes sure you get a bunch of nice juices in your salad.
  2. Remove pit from the olives; crushing them a little first with a pestle or a knife makes it easier. Of course you can buy olives without the pit but the whole ones have more taste.
  3. Tear olives apart into smaller pieces and mix them with the tomatoes.
  4. Add the basil, cayenne, oregano and balsamic vinegar.
  5. Toast some ciabatta bread.
  6. Put basil salad on the bread and add half a piece of mozarella on top.
  7. Pour some olive oil on the mozarella, sprinkle some parmesan cheese and enjoy!
