Ingredients:

Directions:

  1. Add enough olive oil to cover the bottom of a large pan, add the onions and garlic, cover and sweat on a low flame for a few minutes.
  2. Add the tinned tomatoes, sugar, salt and pepper to taste and Italian herbs.
  3. Cook, uncovered, on a high flame for about 20 mins or until liquid has reduced by half.
  4. Check seasonings.
  5. Blend in a food processor until smooth.
