Ingredients:

Directions:

  1. Prepare barley according to pkg directions (I usually prepare 2 cups the night before & use the remaining barley in soups or stews during the week)
  2. In a large skillet, crumble the sausage, sprinkle with oregano and cook on medium heat until done (about 3 minutes). Add two tablespoons of water to the pan and add bell pepper, onion and cooked cauliflower. Cook this mixture until heated through (about 3 to 4 minutes). Take the skillet off the heat.
  3. Scramble the egg beaters in a small pan until completely cooked and crumbled. Fold into the sausage mixture and serve immediately.
