Banana Sweet Potato Pie

Ingredients:

  • 2 cups sweet potato
  • 1 cup banana
  • 2 eggs
  • 1 tsp cinnamon

Directions:

  1. Cook two large sweet potatoes, cool, and pull off the skins. Preheat the oven to 350. Put the potatoes in a bowl with one large banana and add the two eggs. Mix with a hand mixer until smooth and looks more or less like cake batter. You may still see bits of sweet potato; that's ok. Add the cinnamon and stir. Coat a pie pan with nonstick spray and pour in the batter. Bake for 25-30 minutes, untill the edges are dark golden brown. Serves 6. Om nomnom.
