Ingredients:

  • 1 large egg
  • 1/4 cup milk
  • 2 oz
  • 3 tsp oat bran
  • 6 oz
  • 1/2 tsp butter

Directions:

  1. In a large bowl, beat egg until pale yellow and fluffy (about 2 minutes).
  2. Mix in milk, mashed banana and oat bran.
  3. Melt half the butter in a 9 or 10 inch skillet and heat over medium-low heat.
  4. Add half of the mixture to the hot pan. Use the back of a spoon to spread the mixture evenly over the bottom.
  5. Cook until bottom is lightly browned, about 2 minutes, then carefully lift crepe and turn over. Cook until second side is lightly browned, about 2 minutes more.
  6. Remove from pan and serve with the fruit salad mix, yoghurt and herbs to taste
