Ingredients:

  • 1/2 cup butter
  • 1/4 cup sugar
  • 1-1/2 cups mashed bananas
  • 6 tbsp lemon juice
  • 2 cups flour

Directions:

  1. This recipe makes 2 lemon loafs.
  2. Preheat oven to 350. Grease and flour pans. Cream butter and sugar. Blend in eggs, bananas, and lemon juice.
  3. In separate bowl sift dry ingredients and stir into egg mixture. Add grated lemon peel and mix well. Pour into pans and bake about one hour or until clean knife inserted in center comes out clean.
