Banana Cornflake Bread

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup mashed banana
  • 1/4 cup butter
  • 1/4 cup water
  • 1 1/2 cups cereal
  • 1 cup walnuts

Directions:

  1. Pre heat the oven at 350 degrees F.
  2. Mix flour, baking powder, baking soda and salt in a large bowl.
  3. Cream butter, add in sugar slowly.
  4. Once it is well creamed, add in eggs.
  5. Mix in water and bananas.
  6. Add in Flour mixture, stir till it is moistened.
  7. Stir in cereal and walnuts.
  8. Pour into greased 9x5 inch loaf pan.
  9. Bake for 55-65 minutes, till toothpick inserted in center comes out clean.
  10. Cool for 10 minutes before removing from pan.
  11. Cool completely on wire rack.
