Ingredients:

Directions:

  1. Preheat oven to 375°F
  2. Put pastry case in a greased pie dish, or use puff pastry to line a pie dish.
  3. Cook blind for 15 minutes.
  4. Beat eggs, add coconut and sugar.
  5. Bring milk to boil and add little by little to mixture.
  6. Bring whole mixture to boil to thin.
  7. Remove from heat, add rum.
  8. Pour mixture over pastry, chop banana and arrange on top to decorate.
  9. Cook for 10 minutes in oven.
  10. Sprinkle with icing sugar and serve.

  12. Try pouring a second shot of rum over the pie while hot, then flambéing at the table - be careful of your guests!
