Balsamic Red Onion & Tomato Sauce

Ingredients:

Directions:

  1. Heat oil in saute pan and the onions. Saute for about 6 - 8 minutes or until wilted and beginning to caramelize and brown. Add the chopped tomatoes and saute for about 2 - 3 minutes. Stir in the balsamic vinegar and reduce for a minute, scraping up all the brown bits on the bottom of the pan. Whisk in the tomato paste, chicken stock, and brown sugar. Add the butter and stir sauce until the butter has melted. Season to taste with salt and pepper.
  2. Serve over chicken, pasta, rice, tofu, grilled veg. whatever.
