Baked Sweet Potatoes

Ingredients:

  • 2 sweet potatoes , halved lengthwise
  • 2 tsp olive oil

Directions:

  1. Preheat oven to 400 degrees.
  2. Rub oil over cut-side of potatoes.
  3. Place cut-side down on baking sheet.
  4. Bake for 50 minutes.
  5. Remove from oven and tent with aluminum foil for 10 minutes (potatoes will continue to cook).
