  1. Preheat oven to 400 degrees. Trim visible fat from sides of meat. Mix oil with salt and pepper. Rub on both sides of meat.
  2. Place steaks in baking pan. Bake in oven for 16-20 minutes. Turn once halfway through baking.
  3. Broil each side for 2-4 minutes, aiming for a little rarer than desired because steaks continue to cook while resting for 5 minutes before serving.
  4. Shorter cooking times are for bone-in raw steaks of about 350 g (11-12 ounces). Longer times are for raw steaks around 660 g (about 1.4 pounds) and a doubling of the oil rub. Use the smaller oil rub for ribeye steak, which is plenty greasy already.
