Ingredients:

  • 2 cups milk
  • 1/3 cup raisins
  • 1/2 cup sugar (white )
  • 2 cups of water
  • 1/2 tsp of salt

Directions:

  1. Put rice, uncooked, into a 3 qt saucepan, and add water. Once at a boil, reduce the heat, and simmer for 25-30 minutes. Now, preheat the oven to 325 degrees F. Combine milk, sugar, beaten eggs, vanilla extract, and salt in a large sized bowl and mix it well. Next, stir in the raisins and rice. Pour the mixture into a 10x6x2 inch baking dish and bake, uncovered, for 30 minutes. Now, stir the pudding while adding a sprinkle of nutmeg. Finally, bake an additional 30 minutes (or until a knife can be inserted halfway between the edge and the center, and comes out clean.)
