Baked Potatoes With Avocado and Bacon Topping

Ingredients:

Directions:

  1. Preheat oven to 400º.
  2. Pierce potato skins in several places with a fork.
  3. Bake potatoes about 1 hour or until tender.
  4. Heat a heavy skillet over medium high heat.
  5. Add bacon and cook 4-5 minutes stirring frquently until crisp.
  6. Drain bacon on paper toweling.
  7. Combine mashed avocado with remaining ingredients, except peppers and bacon in bowl.
  8. Split baked potato down the middle.
  9. Divide avocado mixture between potatoes and top with peppers and bacon.
