Baked Oatmeal With Fruit and Nuts

Ingredients:

  • 1 medium apple, chopped
  • 3 cups oats
  • 3 cups soymilk (or rice milk
  • 2 tsp vanilla
  • 1/2 cup nuts, chopped

Directions:

  1. Spread chopped apples and dates in the bottom of baking dish sprayed with vegetable spray.
  2. Add oatmeal and spread evenly.
  3. Mix vanilla into milk and pour over the oatmeal.
  4. Spread nuts evenly over the top of the oatmeal.
  5. Bake, covered, in a 350 degree oven for 50 to 60 minutes or until set.
  6. Serve warm with added milk.
  7. NOTE: This can be individually portioned and frozen for convenient use later.
