Ingredients:

  • 1/2 large onion, diced
  • 22 oz cod
  • 1/2 tsp lemon rind
  • 1 tsp salt
  • 1 tsp pepper

Directions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Mix parsley, breadcrumbs, onion and lemon rind to form forcemeat.
  3. Sprinkle half the forcemeat in baking dish, place fish on top and cover with remainder of forcemeat. Dot with margarine
  4. Cook and cover with tin foil for 30-45 minutes for large fish. When cooked, flesh is white and will lift readily from the bone.
  5. Served garnished with lemon wedges.
