Bacon (Yes, Bacon!) Peanut Butter Cookies

Ingredients:

  • 1/2 cup peanut butter
  • 1/2 cup splenda brown sugar (don'tsp pack down)
  • 1 egg
  • 1/2 tsp maple extract
  • 1 1/2 cups pamela's ultimate baking and pancake mix

Directions:

  1. Preheat oven to 325.
  2. Cream together the butter and peanut butter.
  3. Mix in sugar, egg, and maple extract. Add Pamela's Baking & Pancake Mix and combine. Fold in bacon crumbles.
  4. Spoon tablespoons of dough onto a lightly greased cookie sheet. Flatten with a fork using a crisscross pattern.
  5. Bake for 17-20 minutes until edges are light brown.
  6. Cool completely before removing from the pan with a spatula.
