Bacon, Tomato and Zucchini Pasta Sauce

Ingredients:

Directions:

  1. Slice bacon into 1cm slices.
  2. Slice zucchini into thin rounds.
  3. Slice onion and capsicum into lengths (about .5 cm wide).
  4. Warm the olive oil in a non stick pan and sauté the bacon, zucchini, onion and capsicum until soft.
  5. Add in the garlic and herbs and sauté for 1 - 2 minutes.
  6. Add in the tomatoes and puree and simmer for 10 minutes.
  7. Taste and add salt and pepper if desired.
  8. Use this on your favourite pasta.
