Backwoods Spinach Salad

Ingredients:

Directions:

  1. Cook wild rice according to package directions.
  2. In a 10 in skillet cook bacon over medium heat, until browned.
  3. Reserve 2 tablespoons of bacon fat, and discard the rest.
  4. In same skillet add vinegar, salt, pepper, honey, and reserved bacon fat.
  5. Cook over medium heat stirring occasionally until heated through, about 3 to 4 minutes.
  6. In large bowl combine remaining ingredients.
  7. Pour warm dressing over salad, toss to coat and serve.
