Awesome Lentil-Barley Salad

Ingredients:

  • 2/3 cup pearl barley
  • 2/3 cup green lentil
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 garlic clove, minced (or as much garlic as you can stand)
  • 1/2-1 tsp ground cumin
  • 1/2 tsp salt
  • pepper , to taste

Directions:

  1. In a large pot, wash and rinse the barley and lentils. Fill pot with a lot of water, and bring to a boil. Once boiling, reduce the heat and boil until cooked - 45 minutes to an hour.
  2. Drain and rinse with cool water.
  3. Transfer to a salad bowl and toss with the onions/chives.
  4. Combine all the dressing ingredients, then add to the lentil-barley-onion mixture, stirring until well combined.
