Ingredients:

  • 2 tsp lemon jucie
  • 1/2 tsp honey
  • 4 cup arugula

Directions:

  1. Combine 1 teaspoon minced shallot, 2 teaspoons lemon juice, and 1/2 teaspoon of honey in a large bowl; gradually whisk in 1 tablespoon extra-virgin olive oil. Add 4 cups of loosely packed arugula amd 1/3 cup of vertically sliced red onions to bowl; toss gently to coat.
