  1. Dressing:
  2. Place the warm walnuts in a mixing bowl.
  3. Add the orange juice and rice wine vinegar.
  4. Season with salt and pepper.
  5. Allow to stand 10 minutes for flavors to infuse together.
  6. Whisk in the oils.
  7. Reseason if needed.
  8. Lettuces:
  9. In a mixing bowl, combine all the greens together and toss with the
  10. Walnut oil.
  11. Mix arugula and lettuces together.
  12. Mound on individual plates and sprinkle the Maytag cheese and walnuts on the greens.
  13. Garnish with the cracked black pepper.
  14. This dressing is soooo good!
