Ingredients:

Directions:

  1. Preheat oven to 325 degrees. Place pie crust in for ten minutes while crust is baking.
  2. Melt butter in a small saute pan over medium heat. Add onion and red bell pepper and cook 3 to 4 minutes. Add garlic, oregano, thyme and cook 2 to 3 minutes more. Remove both from heat and cool.
  3. Roughly chop the artichokes. Whip the eggs in a large mixing bowl, and mix in the rest of the ingredients.
  4. Spread the mixture into the pie. Bake 30 minutes.
  5. Let cool to room temp
