Armenian Potato Salad

Ingredients:

  • 4 medium white potatoes
  • 1 tsp salt
  • 1 tbsp dried mint
  • 1/4 cup olive oil
  • 1/4 cup lemon juice

Directions:

  1. Boil potatoes until done.
  2. Slice when cool.
  3. Add all the ingredients together.
  4. Toss and chill about 2 or more hours.
