Armadillo Eggs - Stuffed Jalepenos

Ingredients:

Directions:

  1. Seed peppers. Stuff peppers with half the cheese and pinch closed. Combine remaining cheese with sausage, and mix well. Mix in baking mix, 1/3 at a time to sausage mixture. Divide into 16 portions. Press each portion 1/4 inch thick. Place 1 pepper on each portion and shape sausage mixture into oval around pepper, enclosing peppers completely. Roll each egg in coating mix; dip into beaten eggs and roll again in coating mix. Arrange in shallow baking dish. Bake at 325 degrees for 20 - 25 minutes or until golden brown. Serve warm.
