Apricot Scones With Devonshire Cream

Ingredients:

Directions:

  1. Combine flour, sugar, baking powder and salt in a bowl.
  2. Cut in butter until mixture resembles fine crumbs.
  3. Add apricots, pecans and orange peel.
  4. With a fork, rapidly stir in 1 cup whipping cream until moistened.
  5. Turn onto floured board. Knead 5 or 6 times.
  6. Divide dough in half and shape each half into a ball.
  7. Roll each ball into a 6-inch circle.
  8. Cut each circle into 8 wedges.
  9. Place wedges 1 inch apart on ungreased cookie sheet.
  10. Brush wedges with 2 tablespoons whipping cream.
  11. Bake at 375 degrees for 15 to 20 minutes or until golden brown.
  12. Serve with the faux Devonshire cream and jam.
  13. For faux Devonshire cream: Beat until fluffy the cream cheese, powdered sugar and vanilla.
  14. Gradually beat in whipping cream to achieve spreading consistency.
  15. Cover and chill 2 hours.
