Ingredients:

  • 2-1/2 cups water
  • 1/4 cup finely chopped dried apricots
  • 1/4 tsp salt
  • 1 cup long grain rice

Directions:

  1. Combine water, apricots and salt in medium saucepan.
  2. Bring to a boil then stir in rice.
  3. Cover and reduce heat then simmer 20 minutes.
  4. Remove from heat and allow to stand 5 minutes.
