Applesauce Muffins

Ingredients:

  • 2 1/3 cups flour
  • 1 cup buttermilk
  • 1/3 cup sugar
  • 1/4 cup applesauce
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves

Directions:

  1. Preheat oven to 400 degrees F. Combine all dry ingredients and mix thoroughly. Combine all liquid ingredients. Add the liquid ingredients to the dry and mix lightly until a batter forms. It will look lumpy, which is perfectly fine.
  2. Cover a muffin tin lightly with cooking oil spray. Use an ice cream scoop to fill the wells of the tin about 3/4 full. (Secret: Make sure the edges and unfilled portions of the muffin tin are clean. This helps the muffins rise up nice and high.)
  3. Pop in the oven and bake for about 20 minutes. Serve warm or cool.
  4. Don't have buttermilk? Just add 1 tablespoon of vinegar to 1 cup of milk and let it set for 10 min!
